Aquarius— 2021 ENTROPY Gippsland Red
A fresh perspective of a wine! Pinot Noir and Pinot Gris grafted together and grown in complete harmony. Co-fermented together, with surprising results. Vibrant, intelligent and unrestrained. Syrah added for the backbone, this drop sits on the spectrum between red and orange. Savoury, with loads of acid and firm tannins. A wild wine that willed itself into existence.

Clarete, by definition, is a wine made with red and white grapes co-fermented together. Unconventional and ethereal for Aquarius.
Intriguingly aloof on the nose. Translucent red with notes of sour cherry, strawberry, rhubarb and delicate spice. Refreshing and stimulating. Light tannins and a mild spiciness draw length and brighten the fruit flavours. Citrusy and cerebral. A nice surprise!

Organic Nero D’Avola from North West Sicily. A bright, juicy, carefree drop with earthy, savoury substance. Ripe black plum, light liquorice notes and cocoa. Medium-bodied, giving and uncomplicated. Fresh and fleshy! A feel good wine for the people. Matched with charismatic Aquarian souls.
