Winemaking

Whole bunches were sealed up untouched for 2 weeks, then destemmed. The berries were rolled once a day by hand; ambient yeasts completed the fermentation. Basket pressed to old French oak for 6 months. Unfined, unfiltered. No adds apart from minimal sulphur. Vegan.

I have been growing the grapes for this wine for 6 years now at a vineyard near Riddell’s Creek in the Sunbury region. I use organic practices, which means using mulches, manures and a lot of whipper snipping. The Franc block has a southeastern sloping aspect, which is unusual, and this fruit is usually ripe quite late in vintage. I’ve been making the wine using whole-bunch fermentation all the way through and it’s usually a really interesting mix of intense primary fruit and herbaceous, savoury flavours.
